  1. Pumpkin Pie Energy Bites: Ingredients:
    1 cup rolled oats
    1/2 cup canned pumpkin puree
    1/4 cup honey or maple syrup
    1/4 cup almond butter
    1/2 teaspoon pumpkin pie spice
    1/4 cup chopped pecans or walnuts
    1/4 cup dried cranberries
    Instructions:
    In a mixing bowl, combine all the ingredients.
    Roll the mixture into bite-sized balls.
    Place them in the refrigerator for about 30 minutes to firm up.
    Store in an airtight container in the fridge.

    1 1/2 cups rolled oats

    1/2 teaspoon vanilla extract
    Instructions:
    In a large mixing bowl, combine the oats, chopped nuts, and dried fruit.
    In a saucepan, heat honey (or maple syrup) and almond butter (or peanut butter) over low heat until it’s easy to stir and well combined.
    Remove from heat, stir in vanilla extract, and pour over the oat mixture. Stir until everything is evenly coated.
    Press the mixture into a lined 8×8-inch (20×20 cm) square pan.
    Refrigerate for a few hours until firm, then cut into bars.
  4. Nut Butter-Stuffed Dates: Ingredients:
    Medjool dates, pitted
    Nut butter of your choice (almond, peanut, cashew)
    Instructions:
    Slice each date lengthwise and remove the pit.
